They're always a favorite on holiday cookie trays and for gift giving. 2 3/4 cups all-purpose flour 1/2 teaspoon baking powder 1 teaspoon baking soda 2 sticks (1 c) salted butter, softened 1 1/2 cups sugar 1 extra-large egg 1 1/4 teaspoons vanilla extract In a medium bowl, stir together the flour, baking powder, and baking soda. Set aside. In a large bowl and using a mixer, cream together the softened butter and sugar until light and creamy. Beat in the egg and vanilla. Gradually, beat in the flour mixture on low speed. Preheat oven to 375° F. Roll rounded teaspoonfuls of dough into balls (about 1"), and place onto ungreased cookie sheets, spacing about 2" apart. Bake for 8-10 minutes, or until edges are golden. Let stand on cookie sheet for 1 minute then remove cookies to wire cooling racks. Makes about 48 cookies. Optional: When cookies are completely cool, frost with simple icing (confectioners sugar and enough heavy cream for desired consistency. Icing can be tinted with food coloring) and decorate tops with sprinkles or sparkling sugar, OR dip cookies half way in melted milk chocolate chips. Allow time for icing to harden before serving or storing.
