Molasses Cookies
3/4 c softened butter 1 c brown sugar 1/4 c molasses (Brer Rabbit brand is best!) 1 egg 2 c flour 2 1/2 tsp baking soda 1 tsp baking powder 1/4 tsp salt 1 tsp cinnamon 1/4 tsp each of nutmeg and cloves For rolling: 1/4 c white sugar 1 tsp cinnamon Cream butter and sugar. Add egg and molasses and mix until well combined. Add remaining ingredients and mix until no flour is left (don't over mix!). Refrigerate for 30+ minutes before baking (up to 2 days). Preheat oven to 350°. Form 1-2 tbsp balls of dough (I use my 1.5 tbsp scoop) and roll in cinnamon/sugar mixture. Bake on parchment covered baking sheet for 9-11 minutes, cracks should be formed on top. Cool for 2 minutes on the sheet and then carefully remove to a cooling station (wire rack, parchment paper, whatever.).
