TEXAS SHEET CAKE COOKIES
½ cup (1 stick) butter, softened 1/3 cup white sugar 1 egg 1 teaspoon vanilla 1 teaspoon baking powder ½ teaspoon salt 1 1/3 cup all-purpose flour ½ cup semi-sweet chocolate chips. Melted 1/2 cup (1 stick) butter 2 Tablespoons Cocoa powder 3 Tablespoons Milk 1/2 teaspoon vanilla 2 1/2 cup powdered sugar DIRECTIONS Preheat oven to 350 degrees. Line a cookie sheet with parchment paper and set aside. IN a large bowl, beat butter and sugar together until fluffy. Add in egg and vanilla and beat again. Mix in the baking powder and salt. Slowly mix in the flour. The dough will be think. In a microwave-safe bowl (I use a Pyrex glass measuring cup, melt the chocolate chips at 30 second intervals in the microwave until melted. Mix into the cookie dough until evenly distributed. Drop dough by measured tablespoons onto baking sheet. Bake 7-8 minutes until they appear just set, DO NOT overbake. They will be very soft, which is good. Transfer to wax paper or rack to cool. For the frosting, in a medium saucepan, combine the butter, cocoa power, vanilla and milk over medium heat. When whisked and melted, remove from heat and whisk in powdered sugar. Pour frosting over cookies and allow frosting to set before serving or storing.
